The grapes are delicately de-stemmed and sent to the pneumatic press for soft crushing without any maceration. Fermentation is carried out in stainless steel tanks under a controlled temperature (16-18°C). This wine spends a few months on the lees before being bottled.
It complements any fish-based first course dish. Excellent with steamed crustaceans, whose delicate flavors combine well with the boldness of the wine, and is exceptional served with breaded scallops and shellfish.
