The grapes are de-stemmed and cold macerated. Fermentation is carried out in stainless steel tanks under a controlled temperature (16 – 18°C). This wine spends a few months on the lees and is then bottled.
It is excellent as a drink. In the Collio area it is a classic for aperitifs. It pairs very well with San Daniele prosciutto and local salami. It also pleasantly complements fish-based dishes, fresh and mature cheeses, and finally, Frico, the staple dish of the traditional Friulian cuisine.
